One of my favourite times to remove colour is when colour itself becomes a distraction.

 

The entire process of making a photograph, from composition to editing, is a process of simplification.

 

We compose using a small window into the world, 3D becomes 2D, and we may further remove or reduce distracting elements in post. And sometimes that means doing a black and white conversion!
